My shortlist would have to be:

- Display News by BK
- ChronoForms
- SOBI2
- JoomlaPack
- JCE
- YOOGallery

There are loads more but they are my faves by a long way...especially ChronoForms, Display News and SOBI2 - the stuff you can do with those three is just mind-boggling.

I'm actually quite a fan of YOOTheme's extensions in general (not the themes so much) - they are very well constructed and usually work great right out of the box, and easy to override.

Sobi2 gets my first vote as well.. I use it for directories, portfolios, lots of stuff...

fboxbot - lightweight no-conflict lightbox for articles
chronoforms - perfect custom form solution
xmap - on every site
joomgallery - simple for clients to manage... works really well out of the box
hxdmoomenu - nice suckerfish using the default mootools from J1.5
fckeditor - every site
jw tabs n slides
jw disqus comments - just started using it
googlemap - all the time...
herdboy tweetme - tweets for articles
stalker module - social media buttons

- JSecure

And then we get to favourite template clubs..
- RocketTheme.com - for more than just templates!

- Shape5.com

Whenever we roll-out a new Joomla based website, by default we have the following extensions onboard:

RSForms Pro best forms component we think
LinkR easy links insertion
Cache Cleaner easy cache cleaner
Better Preview the name says it all
Modules Anywhere add modules to your content
Display News easy nes display
Extended Menu great for select list menu's
JSecure secure administrator access
XMap html and xml sitemap
RokBox lightbox popups
All Videos Reloaded insert video's inside content
YOOSearch beter search module
YOOMaps integrate google maps
YOOLogin better styled login module

Next to that we also do the following:

Never use jos_ as prefix for database tables
Always remove the default admin user
Always put on default joomla sef url's

2. JoomlaWatch - on most websites I own/run
3. Back Button by Martijn Vreeken - Every website for custom 404 error page.
4. JRPassphrase - must have for a closed community!
5. MorfeoShow - for websites with a photo gallery
6. JFusion - for use with PhpBB Forums
7. AlphaRegisteration - Must have on every website
8. Joomla Updater - on every website, but changing over to Sam Moffatts updater on the next Joomla version!

I have some other extensions that I use depending upon the website content needs. There are so many choices available, its just finding the time to "test" them out!

@Mark: Can you explain what you mean by Back Button by Martijn Vreeken - Every website for custom 404 error page?
I see the use of backbutton but what this has to do with a custom 404 error page :) ?

I made a un categorized page for my 404 page. When some types in a url, I have it redirected to that page vs the 404 page that comes with Joomla. Why direct visitors to your site to a page that looks nothing like your website. On that page I create, I put info on how to get to the main page, or other pertinent pages, or you can click on the link I put in with the back button function to return to the previous page.

I know the back button on the browser does the same thing, but why not give them another option directly where they are reading vs having to move their mouse to the top left corner of the monitor?
