So, what are your thoughts on this?

Will many small and medium businesses (SMBs) opt to use services like these for their presence on the Internet?

Are the days of small, independent web development shops destined to go the way of the corner grocery store?

I don't think so. I've recommended to a *number* of people in the forums and in my meatspace life that they should use WordPress.com instead of messing with hosting and configuration that is honestly above them. These folks aren't looking to spend money on Web site development - they are having fun and wouldn't be involved if there were a cost to build the site.

If anything, I see services like DrupalGardens and WordPress.com expanding the market by making entry easier. We need an equivalent for Joomla!.

Yes we do. Problem is there is no Acquia or Automattic (one semi-official company backing the project, lead by the beloved dictator). Others can do this (and I thought some already have) but it will not be official.

Or Amy, do you think anyone should do this? Like JXtended or JoomlaTools?

Seems to me one would need pretty deep pockets to start a similar service using Joomla! (and be willing to wait a while for the return on investment to start coming in). Start-up costs would include investment in server and networking infrastructure, organizing and staffing a support center, etc.
